What would be more beneficial when it comes to selling (original) patterns for knitting?
Trying to sell them to a craft magazine or publishing a book of them?

Either way sounds good, if you want to talk to a publisher, look for Lark books or Sterling/Lark books online. The original owner of Lark was a friend of mine, he started Fiberarts magazine, and now Lark or Sterling / Lark publishes books on how to do all sorts of crafts. Good luck!
It might be better to take out an ad in a knitting magazine rather than try to sell to a mag or publish your own.
