That’s a great idea, but you’d be better off online looking up appropriate ways to introduce them to each “art” you want them to check out since there are soooo many.
You might want to go to a bookstore though and take a look through the books since I’m sure there are books dealing with a number of “arts” like that …if you don’t want to buy anything, just take a paper and pencil and write down the names of the arts you’d like to check out online at home (due to their ages, you could use the word “tweens” in your searches to limit the levels you’ll get–though a 12 yo is able to do a lot more than a 7 yo who would not quite even be a tween).
Or perhaps just start by making a list of possible things you’d like to introduce them to…here are just a few of the many possibilities (then do searches for them online):
…sculpting with various kinds of “clays” (prob. not earthen clay tho to save money…try homemade bread clay or salt dough clay or buy Creative Paperclay or other air-dry clays, or use polymer clay (oven bake)
…papier mache… paper pulp for sculpting or paper making… decoupage
…drawing…painting…sgraffito
…printmaking (“monoprints” can be made in many simple ways and are great fun…we used foam plates for many of ours)
…fabric and fiber (sewing, quilting, knitting, fabric braiding/rope, dyeing/tie-dye, weaving, and so much more)
…wirework of all kinds
…scrapbooking
…photography
…dioramas
…cake decorating, etc… fondant
…paper modeling… origami… architecture
For some of those things you might want to check out my site… it’s largely about polymer clay but there are other things there too on many of the pages and sort of mixed in….start here:

You might also want to check out the various boards and sub-boards at Craftster.org, especially for the 12 yo:

all their craft forums: http://www.craftster.org/forum/index.php …down on the right (click on each board to see the many sub-boards under it as well):
You also might want to have them make items for next year’s xmas tree or for display in a shadow box or some other way. Many arts/materials could be used for making ornaments, e.g.
