Nascar week-Have them make little models of cars (Of course make it simple, they’re kids) Like out of a shoebox, and some old cd’s or bottle caps or anything really, like an old can.
Safety week-Have them make stop signs or draw pictures.
Pro sports week-Have them make models of things to do with sports, like a basketball or a football or a hockey stick
water week- Models of anything to do with water, like water droplets, clouds, fish.

how old are the kids if they are really young use Oreo cookies, peanut butter and long sandwich cookies to “make” cars. If they are older use empty spools of thread, buttons, string, and wire and have them create their own “cars” that have to be able to roll. If they are 4th grade and above have them create and design a “car” out of any other type of material giving specific size etc and have them “race” them.
Safety week you can have a scavenger hunt for “unsafe” things where ever you are, for the little ones making street signs out of construction paper etc is fun. For the older ones have them make a little town with roads buildings etc out of a shoe box. They will have to “make” everything from the trees to stop lights etc.
You can also check the Internet for some great sights on kids crafts. Teachers use these all the time. Good luck.

Nascar week – how about fabric paint on a T shirt with the car/driver/number. Set up a race track with a slanted piece of plywood – have kids race match box cars = give ribbons for winners.
Pro Sports – a poster for their wall of pictures, of their favorite team, player etc. – cut from magazines. Design new uniforms for their favorite team – change logos, team colors etc.
Water week – do you have use of a microscope
examine a drop of water from faucet, stream, river, pond, etc. How about a demonstration on what things float – have different objects to drop in a pail of water – have them guess whether they will float or sink
